Ingredients

  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 1/4 cup dry white wine (optional)
  • 1 tablespoon balsamic vinegar
  • 1/2 cup crumbled goat cheese
  • 1/4 cup mascarpone cheese
  • 1/4 cup chopped fresh herbs (such as parsley, thyme, or rosemary)
  • Salt and pepper

Equipment:

  • Large skillet

Instructions:

Step 1Heating a Saucepan

Turn on your stove and put the large skillet on it over medium heat. Then add the onions and cook for about 10 minutes.

Step 2Caramelizing Onions

When the onions get a soft texture, don’t stop. Just lower the heat and keep stirring every now and then for about 20 minutes more. If the onions turn deep brown and caramelized, then the onions are done.

Step 3Caramelized Onions

After caramelizing the onions, you can use white wine, though it’s optional. So, if you’re using it, you’ll need to add it in the last ten minutes of your cooking. Then, let it simmer for a few minutes. Then, stir in the balsamic vinegar and cook for another minute. It will meld the flavors.

Step 4Cooling Caramelized Onions

In step 4,  you just have to take the skillet off the heat and let the caramelized onions cool a bit before blending it with the other ingredients.
